A Place at the Table Chicken Fried Rice (Chaufa de Pollo)

One evening at the Zell's household, with the help of the kids, Melodie, Scarlett, Micah, and Sara, we made one of my favorite dishes. but my favorite part wasn't the meal, rather the stories and testimonies of Gods goodness etc.

Per requested, here is the recipe as follows

Chicken Fried Rice

yeilds 4-5 portions

This a simple dish, but the depth comes in the technique. THE MOST IMPORTANT STEP, IS GETTING THE RICE PERFECT. If this is right, everything else will follow. We don't want mushy, watery rice, we want perfectly cooked and fluffy rice.

It's a 3 step process, so track with me.

Step A

For the Rice

4 cups par boiled rice (washed twice and water drained Completely)

4 cup + 1/2 cup water

2 Tablespoon Beef bouillon powder, (2 packets powdered beef bouillon)

1 Teaspoon salt

1 Bay leaf Dried

Directions: Add in rice cook, wash rice per instructed, and then add water and everything else, and cook in rice cooker. Once cooked, i recommend to fluffed the rice and mix the bottom around and fold to the top, and cover again for another 10 minutes off the heat. This will ensure even cooking.

For the Chicken

2 pounds boneless chicken thigh meat (cleaned and cut into 1/4 inch cubes)

2 inch piece of ginger finely minced (3 Tablespoons)

1/2 white onion diced small

1 Tablespoon Oil

1/2 cup Kikkoman Soy sauce ( or teriyaki sauce)

cracked black pepper


Step B: Cook diced chicken till no pink with oil on medium heat. Try not to burn bottom of the pan, brown bits are okay, just not black burnt bits on the bottom of pan. Then add giner, and onions until fragrant. cook 3 minutes, and deglaze with soy sauce. and scrap bottom of the pan to grab any fond (caramelized bits) Set Aside. DO NOT COOK TILL SAUCE SAUCE IS COMPLETELY EVAPORATED, maybe 1 minute max. Mixture SHOULD STILL have SOME LIQUID IN THE PAN,

Step C

For the Fried Rice Execution

1/4 C veg oil or neutral oil (not EVOO)

3 eggs cracked, not whisked

1 qt or 4 cups cooked rice

Set aside chicken thighs and liquid

Soy sauce

1/2 Tablespoon MSG

Sesame Oil

1/2 bunch scallions

pinch of black pepper

Cooked diced chicken mixture (bowl that was put aside)

Directions: In a seasoned High sided wok, Add veg oil, and bring to a high heat. You almost want to see light smoke coming off your wok, but not too hot where the oil will ignite, may 1 minute on high heat. Once oil is extremely hot, Add 3 eggs, and stir in the oil, and cook till eggs are light and fluffy. add cooked rice, stir fry, and move around 2-3 minutes. Then add diced chicken, with liquid. and stir. Add scallions, msg, and stir-fry to develop Wok burn. cook for 5 minutes, add soy to your liking. and finish with sesame oil and enjoy.
